Pear sorbet with green tea

Ingredients

  • 6 tablespoons green Chinese tea (China Lung Ching)
  • 750 ml water
  • 2 tablespoons sugar
  • juice of half a lemon
  • 2 pears

Preparation

Bring 750 ml of water to a boil, pour it into a preheated pot, and add the tea. Let the tea steep for 7 minutes, then strain it. Dissolve the sugar in the tea while stirring, and stir in the lemon juice. Peel the pears, remove the cores, and puree the flesh, saving a few pieces of pear. Mix the pears with the tea. Pour the tea into a plastic bowl and place the bowl in the freezer. Stir the tea every fifteen minutes so it doesn't freeze solid. After 2 hours, the tea will have a granular texture. Let it sit for another hour. Then remove the bowl from the freezer, beat the sorbet well again, and divide it among four chilled glasses. Garnish each sorbet with some pear pieces.
