Don't worry, we are happy to explain it to you simply! Let's get back to basics: how is coffee normally processed?
After coffee cherries have been picked, they must be processed to ultimately end up in your cup. There are several ways to do this – the most common are “washed” and “natural”.
This usually takes place outside, with sun and air. With the Anaerobic Natural method this is done slightly differently. And that creates a completely different taste experience.
What does “anaerobic” mean? “Anaerobic” literally means without oxygen. So instead of letting the coffee cherries ferment outside (as with most methods), they are put in sealed tanks. No air, no oxygen. What does happen is a kind of controlled fermentation. Compare it a bit with how wine or yogurt is made.
How exactly does that work? Ripe coffee cherries are picked by hand. Only the most beautiful and ripe berries are used.
The berries go into closed tanks. There they ferment in their own juices, without air.
After a few days they will dry. This is usually done on raised drying beds so that they can dry neatly and evenly.
Then they rest for a while. This is necessary to nicely balance the flavors.

And what does that taste like?
That's where it really gets fun! Anaerobic natural coffees often have very distinct flavors. Consider:

  • Tropical fruit, such as mango or pineapple
  • Winey, almost champagne-like acidity
  • Sweet and full body, sometimes a bit syrupy
  • Sometimes even notes of chocolate or spices

Sound special? It is. Not everyone will immediately like it – it is a truly adventurous cup of coffee. But if you're open to something new, this could become your next favorite.
