This coffee comes from Finca Las Palmas in the Huila region, where producer Elfren Echeverry combines traditional coffee cultivation with innovative fermentation techniques. The use of Pink Bourbon and controlled anaerobic fermentation creates a coffee with a distinct aromatic profile and a modern taste experience.

The result is a refined and fruit-driven coffee, ideal for specialty coffee lovers looking for complexity and originality.

Finca Las Palmas is located in the department of Palestine, in the southern Huila region, where the central and eastern Andes mountains meet. The farm is managed by Elfren Echeverry, who continues the family tradition in coffee while focusing on innovation and quality.

The plantation is surrounded by banana palms, which provide natural shade for the coffee trees and contribute to a balanced microclimate. In addition, guadu bamboo forests ensure water regulation, biodiversity and ecological balance in the region.

The farm experiments with exotic varieties such as Pink Bourbon and advanced fermentation processes. A controlled anaerobic fermentation was used for this coffee, using specific microorganisms and natural sugars from locally grown fruit.

This results in a distinct and complex flavor profile, focusing on fruity and sweet aromas.
